Many readers might be surprised to hear that I drink coffee every morning. It’s true. I love everything about coffee…from the aroma of the brewing pot to the ritual of taking my first sip….I LOVE COFFEE. However, what I don’t always love is the blood sugar spike and crash that happens with drinking coffee on an empty stomach in the morning. I’m a big believer in the power ofto keep energy, hormones and mood stable so for a period of time I tried to give up my morning Cup of Joe.
But I missed it.
And I’m not a morning TEA person.
I’m a morning COFFEE person.
So to keep my blood sugar happy, I decided to take my own advice and developed a whole meal, healthy cup of coffee. Well actually, it’s a SUPERFOOD coffee that contains a protein, healthy fat and carbohydrate….3 components that keep my blood sugar stable and my nutritionist mind at ease.
Oh and I feel smarter and I think my hair is shinier too
How do I make this miracle in a cup? Let me share my secret SUPERFOOD ingredients with you.
To my cup of organic coffee I add:
Coconut Oil: The evidence supporting the is mountainous. The combination of fatty acids in coconut oil give it . Not only that, but the lauric acid in coconut oil will help to combat fungi, viruses and bacteria. I use a derived from coconut oil when my kids are sick and encourage the use of coconut oil in our cooking, baking and now…coffee consumption! This is my favorite brand of . I add about 1 tablespoon to my coffee.
Gelatin: Gelatin is a processed version of the structural protein collagen, and helps make our skin, bones and tendons strong and healthy. When is consumed from grass-fed cows it can be wonderfully healing for the digestive tract as well. Not only that, but gelatin also contains a ton of natural protein, without any chemical fillers. I make with our grass-fed gelatin, and now I put it in my coffee as well. This is my for making fruit snacks (it gels) and this is my for coffee (it does not gel). I add about 1 teaspoon to my healthy cup of coffee.
Raw Honey: has not been heated or pasteurized so it contains all the living enzymes, vitamins and antioxidants it gets from nature. I used raw honey in California, but now that we are living in Argentina I am unable to find it. If you have access to where you live, try substituting raw honey for regular sugar in your coffee. Honey adds a little sweetness to your healthy cup of coffee.
Raw Homemade Almond Milk: I used to use a coconut creamer in the USA (that I LOVED) until I studied the ingredient list and read: Carrageenan. Carrageenan is a seaweed-derived additive that helps make non-dairy products creamy and smooth but has been shown to , something I try very hard to avoid. So for that reason I had to give up my beloved coconut creamer and now use in my healthy cup of coffee. On the mornings I blend up my almond milk (about once a week) I skim the foam off the top and my coffee turns into an instant latte. Those are good mornings. You can also make your own too!
Preparation: BLEND IT UP! I used to add all these ingredients into a cup and stirred it with a spoon, but then I read about blending coffee. At first I thought–NO WAY–too much effort (I’m blending things all day long in the kitchen and not looking for more projects). But finally I tried it, and it made my cup of coffee 5 times yummier. So now I pull out my magic bullet blender for coffee in the AM. It makes a big difference in the taste so I encourage blending this coffee recipe. I add one cup of black coffee, 1 teaspoon gelatin, 1 tablespoon coconut oil, 1 teaspoon honey, 2 tablespoons almond milk to a small single serve blender (magic bullet type) and blend for 10 seconds. You can also use an immersion blender.
