Ingredients:
600g baobab fruit pulp 1.2litres warm water 2 tbsp sugar or your preference (Optional ) 50mls milk 1 teaspoon vinegar 2tbsp dry coconut powder.
Method:
Add the baobab fruit pulp to a large bowl and add the warm water and sugar. Leave to sit for at least four hours. During this time the very dry fruit pulp will hydrate and will come away from the seeds and the fibrous matter of the fruit.
Stir the mixture vigourously until the water becomes an opaque, tan, liquid. Strain the resulting juice. Add milk, vinegar n coconut powder.
Serve chilled.
NB: Baobab fruit powder contains a variety of vitamins and minerals. Gram per gram it contains six times as much vitamin C as oranges, twice as much calcium as milk and even more iron than red meat. It is also rich in potassium and has plenty B vitamins, magnesium, phosphorous, and antioxidants.
