Blood Sugar Level Assay

Here is a healthy chia seed pudding recipe from vegan . With the fresh berries it makes for a perfect for a summer dessert.

I created this simple recipe whilst on a health kick last October, and it became my go-to dessert. It is full of all the health benefits of chia seeds; protein, fibre, calcium, iron, magnesium, B vitamins, anti-oxidants and omega 3 fatty acids. I also love having this as an afternoon snack at work, I just put a jar in the fridge and when the sugar cravings kick in at 3pm it is there waiting for me. I find my energy picks up without the ‘sugar-rush’ and the ‘sugar-slump’ an hour later. The berries are also great with it as they add a lovely tartness. Other fruit that goes well is chopped plums, sliced banana or fresh raspberries. I hope you enjoy this easy recipe.

Chia Pudding

2 ½ tbs chia seeds

½ tbs cocoa powder

1 tbs maple syrup

200ml coconut milk (such as Pureharvest ‘Coco Quench’)

strawberries and blueberries (or fruit of choice)

mint garnish (optional)

Method

  • Place chia seeds, cocoa, maple syrup and coconut milk in a jar. Screw on the lid and shake until combined.
  • Leave to sit for 1 minute then shake again. Repeat once more then place in the fridge to set for 1 hour.
  • Once set, spoon into jars or glasses, and top with berries. Garnish with a little extra maple syrup if desired and fresh mint leaves. Enjoy!
